Is there a reason the monitor factor for inputs is no longer editable under Profinet, Interface List?

I use the same version of PLCnext Engineer and it works fine for me. Make sure that the monitoring time is**** a multiple of 3. Otherwise the value cannot be changed.

Apparently this is a „feature“ that there are currently no plans to change.
The Monitor Factor (inputs) field can be changed using the following procedure:

                                          * Set the "Timing" field to "Symmetric".
                                          * Change the Monitor Factor (outputs) field to the value you want for Monitor Factor (inputs). The Monitor Factor (inputs) field will change automatically, to match the value in Monitor Factor (outputs).
                                          * Set the "Timing" field to "Asymmetric".
                                          * Change the Monitor Factor (outputs) field to the value you want. The Monitor Factor (inputs) value will remain unchanged.
